Inspired by Mediterranean cuisine and Southeast Asian flavour profiles, head chef Jules brings his "obsession" for fish and fire to Pearl, building a stunning open plan kitchen and a "beast" of a custom-made charcoal grill, in the service of his dynamic, sustainably-sourced seafood menu.
Fare such as stingray, yellowfin whiting, flathead, line-caught nannygai, Spencer Gulf king prawns and Smoky Bay oysters rotate through his inspired, ever-changing menu – as does high quality local produce – and of course, wine.
